For the longest time I’d given up on protein pancakes. Mostly because I didn’t know what the batter was supposed to look like, which protein to use and I didn’t have the patience to wait a few minutes before flipping them. Then I’d randomly pick recipes on Instagram that looked promising but didn’t pass my taste and texture test.
I mean, I love pancakes. Not egg-like spongey things that taste like they could be pancakes. I’m sorry, but that’s just nasty. 🤢
Plus, I’m lazy, so I’m not down with using a million different ingredients either.
Out of desperation and sheer coincidence I just happened to combine a few ingredients just to see if it would work.
The result?
The easiest fluffiest pancake-like recipe that also has a good amount of protein in them.
Ingredients:
- 120 g cup of Trader Joe’s Buttermilk Pancake Mix (about 1 cup)
- 70 g of Pescience Vanilla Protein (about 3/4 cup))
- 1 large egg
- 1 cup of 2% milk
This recipe makes about 6 pancakes for total batch macros of:
- Protein: 80 g
- Carbs: 103 g
- Fat: 19 g
- Total Calories: 891
So if you divide the pancakes by 6 you’d get:
- Protein: 13 g
- Carbs: 17 g
- Fat: 3 g
- Calories: 149
I mean, for protein pancakes that taste like REAL pancakes this is a BIG deal.
I love to eat these the morning of my heavy lifting days. I workout during the kid’s nap time (around 2:30 pm) so it works for me. If you workout SUPER EARLY you could potentially have these for dinner with a #extraproteineggs scramble mixed with ham, veggies, and a lite cheese for a complete breakfast.
